Parmesan Cheese, f251
Parmesan cheese (f251) may cause allergic reactions in individuals sensitive to milk proteins (casein, whey proteins) and components of fermented dairy products. Reactions may be immediate or delayed and can affect the skin, gastrointestinal system, or respiratory tract.
Indications
- itching or urticaria
- swelling of the lips, tongue, or throat
- nausea, abdominal pain, vomiting
- cough, difficulty breathing
- discomfort after consuming dairy products, especially aged cheeses
Procedure
- venous blood sample collection
- enzyme immunoassay testing
- determination of specific IgE to Parmesan cheese (f251)
- identification of sensitization to milk proteins and product components
Preparation:
• no special preparation is required
• blood collection on an empty stomach or 3–4 hours after eating
• avoid alcohol consumption 24 hours before the test
• avoid intense physical activity before testing
• antihistamines usually do not affect results, but inform your doctor about any medications taken
